I'm one of 17 apprentices learning to be chefs at the Fifteen Foundation.

Before I joined I hadn't been doing very much and I didn't really know what I wanted to do.

Since we started the course, we have been spending part of the week at college learning theory, while the rest of the time we're at the flagship restaurant in London in the kitchen working under the supervision of the professional chefs.

Our sourcing trips, where we get to meet our suppliers and learn about food, are one of the highlights. Next week, we're going to Cumbria to learn all about pigs and pork.

Another great experience for me was a team-building course at an outdoor adventure centre. We had to climb a pole as tall as a lamppost and then climb onto a platform and jump across to a trapeze. I still can't believe I did it.
