The targets would set maximum values for total fat, saturated fat, totalsugar and salt in meals and aim to support nutritional standards forschool dinners. Schools are encouraged to use the specifications, due tobe published in the autumn, when arranging catering contracts.
Annie Seeley, a nutritional consultant, said despite the targets'voluntary status, it was significant that they would be monitored, asprevious FSA research examining the compulsory nutritional standards ofschool meals in secondary schools had shown that a third of caterers didnot realise standards existed.
